When the then King of Communism, Nikita Khrushchev, came calling in 1955, Calcutta gave him a royal state banquet for which Sabir’s, the legendary Mughlai restaurant, created a special dish: Mutton Rezala, meat simmered to succulence in a white, delicately-flavoured gravy.
You didn’t have to be a king, of Communism or anything else, to dine like a prince in the city. For a couple of rupees you could give yourself a culinary treat fit for a nawab in the aptly named Nizam’s (pronounced Nai-zam’s by the majority of its customers), famed for its kathi rolls: charcoal-grilled meat, chicken, or potato, wrapped in a crisp paratha fried to golden perfection.
